How to use

  1. Set the original number of servings
  2. Add each ingredient with its quantity and unit
  3. Set the target number of servings
  4. Click Scale recipe: scaled quantities appear next to the originals

Scaling works by simple ratio

Scaled quantity = original quantity × (target servings / original servings)

Example: 200g flour for 4 servings → scaled to 6 servings = 200 × (6/4) = 300g flour

Important notes for baking

Simple ratio scaling works well for most savory recipes but requires care for baking:

  • Leavening agents (baking powder, baking soda) do not scale linearly for large batches, use about 75% of the scaled quantity for batches above 3× the original
  • Eggs: you can use half an egg (beaten) for odd fractions, or adjust by rounding to the nearest whole egg
  • Salt and spices: start with 75% of the scaled quantity and adjust to taste
  • Baking time, does not scale with quantity. Keep the same temperature and check for doneness at the original time.

Converting US recipes to UK weights: the cup problem

Most UK bakers weigh ingredients in grams; most US recipes use volume cups. The conversion is not universal, it depends on how densely packed the ingredient is:

The easiest solution: use a kitchen scale and weigh all dry ingredients. This eliminates the cup-size ambiguity entirely (UK metric cup = 250ml; US cup = 240ml, a 4% difference that compounds across a recipe).
